Cucumber Sandwich
One of our favorite spring & summer sandwiches to make here at the EVRT household, is a Cucumber Sandwich. As much as I love cooking from scratch, a lot of times you don’t have that option for lunch, unless you prepare something in advance.
So this sandwich is super easy to make with store bought items, and is delicious & vegetarian.

Toast a bagel lightly, and once done spread vegetable cream cheese on both halves. On one half lightly add salt, fresh pepper & a small amount of garlic powder (all optional of course). Add a slice of swiss cheese to the other half.
Thinly slice a cucumber and place around one half. Normally I am now finished with the sandwich, but today I added some sliced roasted red bell pepper: which was amazing.
You could also try a little red wine vinegar as an option, or caramelized red onion, or even bacon or prosciutto. Actually I forgot we normally add dill. It is no wonder sandwiches are some of my favorite food.
