I made a batch of homemade pickles yesterday. I tasted one at lunch today, and they are good but the recipe needs some adjusting. I’m trying to recreate the homemade pickles from Blanc Burgers & Bottles.

Every summer when tomatos are in season, I have an obsession with some form of food resulting in the combination of tomatos, mozzarella and basil. Last summer it was Bruschetta on garlic Naan bread. This summer’s obsession (thanks to my mother-in-law) is Panzanella, which is an Italian bread salad. I think we have made about 4 big batches in the last 3 weeks, and it disappears within an hour.
Grape tomatos work great for this salad, but it is better if you mix in at least one or two large tomatos for the juice, since the bread soaks it up. The best batch we have made also included a fresh baguette from Bloom bakery. The rest of ingredients are:
half a ball of mozzarella, diced
5 or 6 fresh basil leaves, diced
half a green bell pepper, diced
half a candy white onion, thinly sliced
half of a baguette (maybe 1 day old), cut into 1 inch cubes
tbsp olive oil
tbsp italian dressing
2 tsp balsamic vinegar
salt & pepper to taste
optional: chives
Pancake Man
I took this about 3 years ago for Design Ideas, to be turned into printed wall art. Might be the funnest set up on a shoot to date. The look on the waitress’ face when I asked for whipped cream and blueberries to make a smiley face, was priceless.
Shot with a 1DS MKII: man I miss that camera. There is something about lugging around a really big heavy camera that is just satisfying.
Anyway, now I’m hungry….
Cucumber Sandwich
One of our favorite spring & summer sandwiches to make here at the EVRT household, is a Cucumber Sandwich. As much as I love cooking from scratch, a lot of times you don’t have that option for lunch, unless you prepare something in advance.
So this sandwich is super easy to make with store bought items, and is delicious & vegetarian.

Toast a bagel lightly, and once done spread vegetable cream cheese on both halves. On one half lightly add salt, fresh pepper & a small amount of garlic powder (all optional of course). Add a slice of swiss cheese to the other half.
Thinly slice a cucumber and place around one half. Normally I am now finished with the sandwich, but today I added some sliced roasted red bell pepper: which was amazing.
You could also try a little red wine vinegar as an option, or caramelized red onion, or even bacon or prosciutto. Actually I forgot we normally add dill. It is no wonder sandwiches are some of my favorite food.
